A door latch is an essential part of any properly functioning door and this term is used to denote several different items related to doors. In a lot of cases the latch is the internal mechanism which keeps the door closed. If you look at the pictures on the top of this webpage, look at the picture to the very left. That is the latch being referred to in this case.

Look at the next picture now. It's the one in the middle with 9 different examples or door handles. These are also referred to as latches. Their function is quite obvious, upon turning or pushing the button, the handle will move the internal latch allowing the door to be opened.

And finally, look at the picture on the far right. That is an external door locking mechanism that is placed on the house side of the door. That means it can only be accessed once you are inside the house or room which features the external door lock. These are additional security measures to keep out unwanted intruders. These are impossible to pick, as there is no way for an intruder to access this from the outside. Of course you can only have this in the locked position while you are inside.
